Four Latinx Eateries Make Desserts Based on Girl Scouts Cookies!

In a partnership made in heaven, during the month of February four Latinx eateries in La Phoenikera and the metro area got together with Girl Scouts to create desserts based on their famous cookies. Holy baby Jesus!

This is part of the Girl Scouts–Arizona Cactus-Pine Council’s Cookie Dessert Challenge (try saying that three times), which has been going on for five years now.

Part of the proceeds will go straight to the organization, which works to prepare girls with the skills and experiences they need to be empowered in life. I never joined the Girl Scouts but they looked cool in movies!

We went to Fair Trade Cafe in Downtown La Phoenikera to try their dessert. They call it Pura Vida Cheesecake and it’s based on the Girl Scouts’ Trefoils cookies.

Let me tell you, it’s not like any cheesecake I’ve had before. It was as if Trefoils cookies, vanilla, almonds and caramel got together, did shrooms and threw a party in my mouth…but like a really good party where DJ Melo was the DJ (one of my favorite DJs in La Phoenikera).

The Pura Vida Cheesecake was created by the owner of the place, Stephanie Vasquez. It was inspired by Costa Rica, where Stephanie first became interested in owning a coffee shop.

Dessert: Jessie’s Delight; it’s a tribute to his mother and it’s made with Do-si- dos, chocolate pudding, crushed peanut butter chocolate and whip cream.

Assigned Cookie: Savannah Smiles

Dessert: Carlota; it’s based on a traditional Mexican dessert by the same name (which is also Lucy’s mom’s name). The Carlota is layered with Savannah Smiles, cream cheese, lemon juice and pineapple.

Dessert: Samoa Mas Latte; it’s made with Samoas, vanilla, coconut, caramel and espresso.
